Alain Ducasse and his friend Bruno Clément have breathed new life into a hotel in Provence, in surroundings steeped in history, on the site of a royal Abbey in the very heart of the Coteaux Varois vineyards.

L'Hostellerie de l'Abbaye de la Celle is made up of several buildings of which the main one was built in the 18th Century. It is a bourgeois provençal house purchased by Madame Sylvia Fournier, the owner of the island of Porquerolles, who transformed this house into a hotel in after the war.

On the initiative of the Var regional council, the building's restoration was carried out by Arc'h, a firm of architects situated in Brignoles, and by the Bâtiments de France guided by Alain Ducasse's sensitivity. The ambience and decoration have been created using objects and antique furnishings that Alain Ducasse has collected during his travels all over France.

People chosen and trained by Alain Ducasse over a period of several years run the establishment.

On the first floor, two bedrooms with a view over the park, including the suite where Général de Gaulle sojourned during his years as President of the French Republic. On the second floor, there are three more bedrooms with a sitting room, affording views over the park or the Place du Marché (the square where the market is held). Five other rooms-including three duplex rooms-with private gardens are located in the convent and look out over the experimental vineyards belonging to the Coteaux Varois wine producers.
