They use fresh, seasonal produce, where possible organically grown. The cooks come from the neighbourhood and cook in the same way they cook at home. Since 1982 they have been running a strictly organic farm. The estate covers ca. 24 hectares: 8ha of forest and 15ha of agriculturally productive land, 3ha of which are used for the cultivation of vines and 5ha for olives. The wine served at Casanuova comes from their own vineyards. It is grown organically and pressed and bottled on the estate.
